I love to cook meals for families, but I do worry about whether the recipients will like my offerings. When I cook for my family, I know what they like and don’t like, but when I cook for others, I don’t have that luxury. So, I pray and try to make dishes I think will be good for that family.
This week, I signed up to bring a meal for a family of 6 in our church. The mom of the family had surgery and needs to rest. It is my joy and honor to cook for them, but again, I worry about just what to bring to bless them. The worst thing I could think of is to bring them something that they hate! (I’ve had that happen to us when people brought meals to us during my chemotherapy, so I know how it feels!). I want to avoid that at all costs.
This family likes more “upscale” foods than I usually prepare, as I am a simple cook and baker and usually avoid the “upscale” recipes. My family prefers more scaled-down foods. I was at a loss and my mind drew a blank when trying to prepare the menu.
So, I prayed and asked my friends on my email loop for suggestions. Here is what I came up with:
~Mixed Organic Green Salad with organic cherry tomatoes, organic baby carrots, organic garbanzo beans, grated cheddar cheese)
~Baked Rolled Stuffed Chicken Breasts stuffed with fresh organic baby spinach leaves, whole wheat breadcrumbs, Parmesan cheese)
~Whole Wheat Cous Cous cooked in organic chicken broth and mixed with butter, chives, organic dried cranberries, toasted almonds
~Roasted green beans with shallots, garlic and organic aged balsamic vinegar
~My Whole Wheat Challah (2 loaves)
~Apple – Pear Pie for a Crowd with whole wheat crust
~Homemade Organic Coffee Ice Cream
