We love pancakes. 100% whole grain, light, fluffy, mild pancakes. Not heavy, dense pancakes. Get the picture? If you’ve used 100% whole wheat for your pancakes and had them to be dense and heavy, try these! Also, if you are like me and during the Summer you hate to raise the temperature INside the house, give this technique a try!
The recipe is an adaptation of my friend Trish Figgers’ son, Micah Figgers’ recipe. Thank you Micah for the great recipe to springboard from. I encourage you all to tweak and adapt recipes to make them your own!

Want to beat the heat and still bake? Make an “outside kitchen” by using a grill! Here are some 100% whole wheat chia pancakes, on the grill.
WHOLE WHEAT CHIA PANCAKES FOR A CROWD
Adapted by Vickilynn Haycraft
4 cups freshly-ground hard white wheat flour
1/2 teaspoon salt
2 teaspoons cinnamon
2 TB baking powder
2 teaspoons baking soda
4 cups homemade almond chia milk (or any milk with 2 TB organic chia seeds)
4 TB virgin olive oil or organic virgin coconut oil
4 eggs, large, beaten
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1/2 cup dried fruit (optional)
Mix dry ingredients in a large bowl. Mix wet ingredients in a blender or another large bowl. Add wet to dry and whisk until smooth. Let sit while grill preheats. Batter will become thick and bubbly.
Preheat cast iron griddle on grill. Grease with organic virgin coconut oil. When hot, turn grill down to medium. Pour batter onto hot griddle about 1/4- 1/2 cup sized pancakes. Lower lid and cook until pancakes are dry on edges. Flip pancakes over and cook until done. Repeat with remaining batter.
