We love snow here in the mountains of Western North Carolina. This year, with the unusual cold front meeting Hurricane Sandy, our area received an early present, an October snow storm. That’s just fine with us!
The children made a snowman and sledded down the hill and chased the dog through the snow. No snowy day would be complete without making Snow Cream. Our non-dairy version is yummy and sweet and lots of fun!
SNOW CREAM
8 cups of freshly-fallen (CLEAN) snow
2 Tablespoons pure vanilla extract (preferably homemade)
2 Tablespoons organic coconut sugar (more to taste -coconut sugar is not overly sweet)
14 ounces organic cream or organic homemade condensed milk
(we use homemade almond milk)
Place clean snow into a large mixing bowl.
Pour in vanilla and coconut sugar.
Add cream or almond milk. Whisk ingredients together until smooth, creamy and fully incorporated. Taste and adjust for sweetness. Dish up and enjoy!
*Note: This is the ONLY time it is permissible to eat brown snow. 🙂 Enjoy!
